Have you ever heard of Konjac or Shirataki noodles? Since I have a box of chicken thighs in my fridge and this cold winter mood, I got an idea to try a new dish for tonight's dinner. Originally I was going to steam the chicken thighs with ginger strips and goji. But remembering that I have a pack of Shirataki noodles, I decided to change the cooking method.

This Shirataki noodles is in a yellow packing sold at Wah Nam Hong in Markthal Rotterdam. You can easily find in any toko I belive, in the cooling section. The package mentioned to rinse the Konjac twice before cooking. Luckily this pack does not have any unpleasant smell. I forgot to snap a picture.

It is very chewy and we love the taste of the dish too!

Below please find the ingredients in the dish. Unfortunately, I always cooking without measuring. Trust your feeling and know your own taste.

How I cook it

  • Pre soak the Goji berries to bring them alive.

  • Cut 1 onions into bigger strips

  • Stir fry the chicken thighs until half cooked

  • Soya Sauce, water, sugar, salt, pepper (more liquid, more soup)

  • Lay the Shirataki noodles on top and sprinkle the Goji berries on top

  • Lid on until everything is cooked

That's all! All in one pot, where you only need to wash one pot. What an environmental-friendly dish, isn't it?
